Very delicious! The peppers and mushrooms had so much flavor. I also served this with toasted or warmed pieces of bread for open or closed-face sandwiches. Very filling, too. Will for sure make again!

This was good and kept kitchen cool since I made it on outdoor grill. I used English muffins instead of Kaiser rolls. Very tasty for our Meatless Monday dinner. It will definitely be on the Meatless Monday rotation!

I prefer Cooking Light's Grilled Portobello-Goat Cheese Pitas recipe. I made these using crusty multi-grain french bread slices as they work well on our panini grill than kaiser rolls. The flavor of the grilled mushrooms and peppers was good, but the bottom slice of bread got slightly mushy. I used provolone cheese slices for my daughter's sandwich as she doesn't like goat cheese and her's looked better than ours. Probably wouldn't make again but I'm glad I tried it.

I thought this recipe was excellent. I used a grill pan as opposed to a grill and slightly more vinegar than the recipe called for. Otherwise I followed the recipe exactly. I do think either toasting the bread or heating the goat cheese prior to assembling the sandwiches is key. Otherwise it makes the sandwich taste cold. Fantastic combination of favors. Will definitely make again!

really liked it - we broiled instead of grilled the veggies as it was winter. we put it in a panini press so maybe some crustier bread would've been good too as our rolls sort of got a little soggy underneath. but great flavor and my husband even liked it (he doesn't usually eat very healthy!)

This was so tasty!! I let the mushrooms and bell peppers marinade for about 3-4 hours and I prepared the vegetables on the grill pan. I put the sandwiches together and then pressed them on our quesidilla maker. I also toasted the buns under the broiler. I will definitely make this for company another time because it had so much flavor.

Excellent, followed the recipes exactly, but on a grill pan. Next time I would cut the peppers in eigths so that they get more grill marks. I would also do the peppers first so that they can cool and I can slice them thin while the mushrooms grill (the thicker mushrooms took longer to cook). Couldn't really taste the basil so I would make that an optional ingredient and not hesitate to make the sandwiches without it, if necessary.

amazing recipe. for two people I used the same amount of peppers (had a few leftover) and just 2 portobellos and fresh buns from the deli. We'll definitely be making this again!

Don't interpret three stars as an indication the recipe isn't good. It's very, very good. In fact, I added it to my recipe book and added it to my favorites in my Living Cookbook software. But the rating system says three stars means a good, solid recipe. Four stars means it's good for a special occasion. This isn't an elegant dish, but it is a good, solid recipe. It comes together very quickly using ingredients most kitchens would normally have on hand. The flavors blend very well together. And the best thing, it's low calorie! We ate these without the bun, so we estimate it's only 217 calories for one mushroom with the fixings! But both my wife and I felt full after eating only one. We had some fruit along with it (watermelon, grapes, blueberries). Very good flavor, healthy, very low fat and very low calorie!

Really good portabella mushroom sandwich. I used a cast iron skillet to grill the cut-up peppers & placed another smaller cast iron skillet on top of the mushroom to get a good grill. I again used the smaller skillet on top of the sandwich when I assembled the vegetables & mushroom on top of the bun. The first time I made it I used feta cheese because that's what I had. The 2nd time I made it, I used the goat cheese. I prefer the goat cheese because it melts so nicely into the sandwich. The flavor was milder than I expected. I thought I'd really taste the balsamic vinegar but it wasn't overpowering at all. This has become one of my favorite lunch meals.

Absolutely delicious! So quick and easy. I grilled the mushrooms and peppers on the George Foreman, pouring the reserved marinade (with extra garlic) over the vegetables. I used a French baguette rather than than a Kaiser roll, and toasted the bread in the toaster, then topped with the goat cheese and put in the microwave for about 30 seconds to warm the cheese. I served the mushroom/pepper on the side of the toast for a less messy meal. Absolutely delicious - we're going to make it again this week!

LOVED this sandwich and have made it over and over! I live in a small studio and have no BBQ, so I grilled the vegetables on my George Foreman! I did not discard the leftover balsamic mixture, and used it to pour on the bread before pressing the sandwich on the Foreman grille. I also sliced the peppers beforehand so I didn't have to wait for them to cool to slice after they were grilled. I also added a little sliced turkey to give it a bit more sustenance. After spreading the goat cheese, I drizzled the left over vinegar mixture on the bread, then added the vegetables and turkey. Then pressed the sandwich on the George Foreman...SO TASTY! Great sandwich for every day!

it was ok as stated in the recipe so I tried it again. I marinated the mushrooms and stuck it all in the fridge. I ended up making it the next day and letting it soak up the marinade made it out of this world~ I hope you all try it this way and enjoy =)

These were pretty good but, in my opinion, not great. Next time, we'll use the nonstick skillet to brown the bread/sandwich. When we used the outdoor grill, the buns burned and stuck to the grill (even though we sprayed it beforehand). A big mess! They tasted good, but were pretty sad looking.

This recipe was excellent. The combination of ingredients enhanced all the flavors. The only thing I used different was, feta cheese instead, only because I had it already. This was very good /w/ the feta. I will try goat cheese next time. Thanks so much for sharing this recipe.

Delicious! I cooked the veggies in a cast iron skillet on the stove top, just as good as grilled. And toasted some burger buns instead of pressing the sandwiches. Next time I would omit the salt or at least cut back, the goat cheese has enough salty flavor of it's own. Served with a side salad of mixed greens. Great simple dinner. Definitely recommend!

This was so easy to make and delicious! I only had slice bread so i used grain oats and it still came out great...and i cut on the cheese but it was worth it!
