The Best Pizza Dough Recipe Only Takes Minutes to Prep!

You might wonder how it’s possible to have this recipe ready to go in the oven in 15 minutes…I wouldn’t believe it either, if I hadn’t made it so many times! The secret is you don’t have to let the dough rise!!

Yep, you read that right! NO RISE TIME!! Which takes any guess-work you might have when baking with yeast OUT of the equation!

But WHY Doesn’t the Dough Have To Rise?

Well, first let’s talk about the yeast we’re using in this recipe. It’s Fleischmann’s® RapidRise® Yeast and quick or instant yeast, like the RapidRise® is milled into finer particles which allows it to dissolve faster! This is why you don’t have to “bloom” the yeast in water before adding it into your dry ingredients! Pretty cool, right?

And I will say, you CAN allow your dough to rise, you just don’t have to! If you allow this dough to rise for 30-60 minutes you will need to punch it down before rolling… so see? What’s the point?

I mean, think about it…you want your pizza crust to be chewy, and slightly “airy”, but you don’t want it to be like bread. AND you’re rolling, or pressing the dough flat, and spreading it with sauce, cheese, and toppings. You don’t NEED it to rise up that much. The short, 10 minute, rest time gives the gluten time to relax, develops the yeast flavor quickly (another benefit of RapidRise® Yeast) and allows for it to rise slightly.

It’s pretty genius!

AND it makes it the perfect pizza recipe to prepare with your kids help. Homemade Pizza Night is a fun tradition, and making pizza from scratch, dough included, just gives you even more of a sense of accomplishment!

Ingredients:

  • All-purpose flour
  • Rapid Rise or Instant Yeast
  • Granulated sugar
  • Kosher salt
  • Warm water (120° to 130°F)
  • Olive oil
  • Pizza sauce
  • Shredded mozzarella cheese
  • Pepperoni or preferred topping
  • Cornmeal if using a pizza stone

How To Make EASY Pizza Crust Dough!

  1. Preheat your oven to 425°F. If using a baking stone, place the baking stone in the oven while it preheats. Otherwise, lightly coat a pizza pan with nonstick spray. Set aside.
  2. In a large bowl stir together 1 cup of flour, dry yeast, sugar, and salt.
  3. Add warm water and oil. Stir using a wooden spoon or rubber spatula for 1 minute.
  4. Gradually add more flour to form a soft dough that holds together in a ball and is slightly sticky.
  5. Knead on a floured surface for 4 minutes until smooth and elastic. Alternately, you can do this in the bowl of your stand mixer. Mix the ingredients together with the paddle attachment, and then attach the dough hook to knead for 4 minutes on medium speed.
  6. Cover with a clean towel and allow the dough to rest for 10 minutes.
  7. Place the dough onto the prepared pizza pan. Or if you’re using a pizza stone to bake, I recommend doing this step on a floured pizza peel or a cutting board. Press the dough into a 12 – 15-inch circle.
  8. Top with your pizza sauce, cheese, and topping(s).
  9. Place the pizza pan into the oven, or if using a pizza stone, remove the stone from the oven and sprinkle with corn meal. Slide the pizza onto the stone and place back in the oven.
  10. Bake for 12-15 minutes, or until the crust is golden and the cheese is melted.

What Toppings Can You Put On This Pizza Crust?

Well, this is where your creativity comes into play! I just used mini pepperoni on today’s pizza, but the sky is the limit! Again, this is a great time to get your kids involved and let them create their very own pizza flavor!

What Can I Add To Pizza Dough To Season It?

This is another great way to put your own stamp on your homemade pizza. Adding seasonings into the dough is a fantastic idea to add more flavor! You will add the seasonings in with the flour mixture in Step #2 of the recipe below.

Here are some ideas to get you started:

  • Crushed Red Pepper
  • Italian Seasoning
  • Oregano
  • Basil
  • Rosemary
  • Garlic Powder
  • Seasoned Salt
  • Parmesan Cheese

Yep! You can make this ahead, just put it in the fridge before it rises, allowing it to rise more slowly overnight!

I made this last night, I’m sure going to make this recipe my go to pizza crust recipe! In trying times with the stay at home in effect because of the COVID-19. I could not find rapid rise yeast at 3 different stores but I picked up some groceries for a neighbor and told her I found everything on our lists we needed except the yeast….with a big smile she ran to her kitchen and handed me a packet. Thank you for sharing and stay safe.

So I have a (probably unfounded) fear of yeast but since this didn’t require a long proofing time I thought I’d try it out for dinner last night and OMG- this was sooo yummy! The dough was so simple to make and it had such a good flavor even without any additional flavoring to the dough. I just made a simple pepperoni, olives and cheese pizza and my husband and I really enjoyed it. Thank you for this!

Is there a pizza sauce you would recommend? Or a homemade pizza sauce? Do you have any recipes for a homemade pizza? Lol. The last homemade crust i made and sauce had no flavor! I like garlicky tastes! Any tips would be appreciated!

We like Don Pepino pizza sauce which is inexpensive and available at my local stores. Here is a link to it on amazon if you’re interested! https://amzn.to/2WSiWE6
And to amp up the garlic flavor in the crust you can absolutely add garlic powder to the crust dough, or melt some butter with a little fresh garlic or powder and brush it on the dough as soon as it comes out of the oven!

Going to try this out on our next Pizza Night – my question is – I purchase my rapid yeast by the container and the recipe requests “1 envelope of rapid yeast” what is the equivalent to tsp.
And I look forward to seasoning the dough with a garlic seasoning that I have on hand..
      Have a great day

One packet is 1/4 ounce, or approximately 2 1/4 teaspoons 🙂

    FAQs

How long does pizza crust need to rise? ›

Rise: Transfer dough to a greased bowl and cover with a dry towel or greased plastic wrap. Allow to rise for 1 to 1.5 hours, or until it has about doubled in volume. Roll out: Gently punch the dough down and place on a lightly greased or floured counter top.

What happens if pizza dough doesn't rise enough? ›

If your dough balls didn't rise, it's because there wasn't enough yeast fermentation. There are several reasons for inadequate fermentation, but here are the top few. 1) There simply isn't enough yeast in your formula. Trying increasing your yeast by 10% increments in future batches to see if you get the proper rise.

Is 3 hours enough for pizza dough to rise? ›

At 70-75 degrees, the dough can take anywhere between 1-3 hours. You can leave the dough to sit at room temperature for up to 6-10 hours to proof it as well. If you wish to let it rise for longer, put it in the fridge.

How do you make pizza crust less rise? ›

You can dock the dough before topping it. Docking means poking holes in the dough so the carbon dioxide, which causes the dough to rise, can escape the crust, causing it to rise less. Just poke the dough all over with a fork, not on the outer crust though, just the center. Then top and bake the pizza normally.

Do you cover pizza dough while it rises? ›

In most circ*mstances covering dough during proofing is the best practice, as it helps keep moisture in your dough. Without covering dough, the surface is likely to dry out which will limit the rise you are looking to achieve during proofing, and it can negatively impact your crust.

Can I still use dough that didn't rise? ›

Everything's coming together when you discover that your bread dough just isn't rising. Fortunately, this is a problem that's relatively easy to diagnose and solve. If your bread dough doesn't rise, you can still use it and fix it by changing up the temperature or mixing in more yeast.

What makes pizza dough rise more? ›

You can use a few methods to help pizza dough rise faster. One is to use baking soda and a warm water mixture. Another is to use a warm environment, such as an oven with a light or microwave. Finally, adding yeast and sugar can help the dough rise.

What is the shortest amount of time to let dough rise? ›

How long should pizza dough sit before stretching? ›

If your pizza dough is quickly snapping back or difficult to stretch, your dough is too tight. Cover your dough with plastic wrap and let it sit for 10-15 minutes. After a bit of rest, the gluten in the dough will relax, making the process of stretching much easier.

What happens if you put too much yeast in pizza dough? ›

Too little yeast and your dough won't rise enough, and the pizza base will taste bland. Use too much yeast and your dough may over-ferment. Tell-tale signs are your dough expanding too much or tasting and smelling a bit sour, with an almost alcoholic aftertaste (the yeast produces alcohol as it ferments).

What does putting holes in pizza dough do? ›

It's a technique called “docking” pastry, and it helps let steam escape the crust when baking so that it doesn't puff up.

Does sugar help pizza dough rise? ›

    Quick Proof Dough

Ensure you are leaving your dough in an environment which is warm enough to get the yeast working faster. The extra yeast is fairly obvious, and the extra sugar is some extra food for the yeast – it will make sure it is feeding and producing gas as an outcome.

Can you let dough rise too long? ›

“If the dough has risen too long, it's going to feel fragile and might even collapse as you poke it,” says Maggie. If this is the case, there's a chance you can save your dough by giving it a quick re-shape. Learn more about this fix in our blog on saving overproofed dough.
