Avocado hummus is a creamy blend of Avocado & Hummus, ready in under 10 minutes. Serve with naan bread, pita bread or vegetable sticks.

Ingredients

  • 400 g chick peas , drained or 1 Cup Cooked Chickpeas
  • 2 medium ripe avocados peeled and pitted
  • 50 g fresh coriander Leaves
  • 4 tbsp water
  • 1 ½ tsp tahini
  • ½ lemon juice
  • 1 clove garlic peeled & crushed
  • 1 tsp ground cumin
  • 2 tbsp extra virgin olive oil
  • salt to taste

Optional Toppings/ Garnishing

  • 1 tsp Olive oil
  • 1 tbsp fresh coriander finely chopped with stalk
  • ½-1 tsp Red pepper flakes
  • 1 tsp Chickpeas

Instructions

  • Place all the ingredients in a hi-speed blender or in a food processor until smooth.

    400 g chick peas, 2 medium ripe avocados, 50 g fresh coriander Leaves, 4 tbsp water, 1 ½ tsp tahini, ½ lemon juice, 1 clove garlic, 1 tsp ground cumin, 2 tbsp extra virgin olive oil, salt to taste

  • Taste and add more lemon juice, garlic or salt as needed.

    ½ lemon juice

  • Transfer the Avocado Hummus to a shallow bowl. Garnish well with extra drizzle of olive oil, reserved chickpeas, coriander leaves and red pepper flakes.

    1 tsp Olive oil, 1 tbsp fresh coriander, ½-1 tsp Red pepper flakes, 1 tsp Chickpeas

  • Serve homemade avocado hummus dip with oat cakes, naan bread or vegetable sticks.
